Over on Facebook this week I asked if anyone wanted this Cheats Gozleme recipe. I was surprised by how many people said yes. So here it is.
We haven’t eaten a lot of gluten for around 6 years but recently I bought a gozleme for my daughter and I to share. It set us back $10 but at least I saw it getting made and it was fresh. Our son later complained because he missed out. So I decided to try and make them at home. I grabbed some lebanese bread, some baby spinach, feta and cheese and had a crack at making one. It was a success. I am calling this Cheats Gozleme because it so simple, largely because you’re not making the dough from scratch yourself. Not entirely authentic but a pretty good copy and significantly cheaper.
Ingredients
- 1 piece of lebanese bread
- 1 tblspn butter
- 2 cups of baby spinach
- pepper to taste
- 1/4 cup crumbled feta cheese
- 1/2 cup grated tasty cheese
- Olive oil
Method
- Using a sharp knife, slide the tip of the knife into the edge of the lebanese bread
- Gently slide the knife to cut the bread at the seam
- When there is a big enough opening for your hand, slide your hand in the middle and gently prise open the bread right to all edges
- Now use the knife to slice all the edges of the bread
- Lay the bread open so it’s to flat pieces
- Add the butter to a frying pan and over medium heat, melt the butter
- Add the baby spinach and some pepper
- Stir until the spinach just starts to wilt, then remove from heat
- Using tongs, place the spinach all around one side of the bread
- Sprinkle the feta over the spinach
- Sprinkle the grated cheese over the spinach
- Fold the other side of the bread over the top of the filling
- Using the same frying pan (no need to wash), heat it over high heat
- Add a splash of olive oil around the pan
- Gently pick up the bread and place it into the pan
- Cook for about 2 minutes. Whilst this side is cooking, add a splash of olive oil to the top of the bread. Use a pastry brush to spread the oil all around the bread
- Use an egg slide to flip the bread over, and cook for another 1-2 minutes until it’s browning
- Remove from heat. Use either scissors or a pizza cutter to cut the gozleme into pieces
- Sprinkle with lemon juice or serve with lemon wedges.
Another 2 ways
- Brown some mince, add garlic, onion, spices and then add this with the spinach, feta and cheese
- Add some grated vegetables like zucchini and carrot to the spinach (squeeze liquid out of the veg before adding to the bread)
Serving Suggestion
Turn this into a main meal with a big garden salad, vegetable crudites and a yoghurt dip.
