The school holidays are a perfect time to test out new foods for the school lunchbox so you know if the kids like them or not. I have been toying with making what I call cheats sausage rolls using Mountain Bread. The kids love them when they are hot and crunchy but we’ve also been testing them cold for the lunchbox too. Our kids are accustomed to eating cold left overs (check out how I trained my family to eat cold left overs here), so they enjoyed these Cheats Sausage Rolls both hot and cold.
Here’s how you make Cheats Sausage Rolls using Mountain Bread
Ingredients
- Mountain Bread
- Filling Of Your Choice* see notes below
- Wash (egg or milk or aquafaba)
- Sesame seeds (optional)
Method
- Prepare a flat baking tray with baking paper
- Preheat oven to 180 degrees
- Lay Mountain Bread down flat with the long side facing you
- Place a thick sausage like amount of the filling of your choice along the middle of the Mountain Bread
- Fold up the edge of the bread closest to you so it folds over the filling
- Then brush the edge of the other long side with the wash of your choice, and fold over the top of the other side of the bread
- Place the long sausage roll on the tray, folded side down
- Brush the top of the sausage roll with your wash, then sprinkle with sesame seeds
- Bake in oven for 15-20 minutes until golden, then turn over and cook another 15 minutes
Notes – Filling varieties
The sky is the limit here. Try your favourite hamburger recipe or some of these:
- Simple rissole recipe
- Mini meatball recipe
- Falafel sausage roll/rissole (recipe to come)
- Roast up some vegetables (pumpkin, sweet potato, cauliflower, garlic, red onion), then blitz when cooled. Add some LSA to combine then mix through some feta cheese

I find if you’re using a meat based filling, it’s best to sit the sausage rolls on wire rack so the sausage roll don’t sit in the juices as they cook.
One of the things I love about Sausage Rolls is that whilst they are a finger food mainly linked to party food or the lunchbox, you can also serve them alongside a couple of delicious salads or steamed vegetables for dinner.
Pies
I also recently used Mountain Bread to make meat pies. I cut the bread in quarters and placed 2 quarters in a muffin hole – one across one direction, the other piece across the other direction (like a cross). Then I filled them with left over spaghetti bolognaise mince mixed with grated cheese and chia seeds. Another win!
