What I love about getting your kids involved in making food choices is how it improves the chances of getting them to eat the food. Another bonus is it helps get them involved in preparing and cooking too. This is how a conversation went at our house this Monday afternoon and how our daughter ended up making these Gluten Free Wraps for to with our dinner.
Me: Which would you prefer for dinner tonight, Pumpkin and Chickpea Curry or Homemade Baked Beans.
9 yo daughter: Pumpkin and Chickpea Curry. Can we have it in wraps with salad and yoghurt?
Me: Sure can. Do you want to have a crack at making some wraps and I’ll make the curry?
9yo daughter: Do I have to? (you can imagine the tone of voice… it was like I just asked her to mop the floors, do the washing, put away the dishes all at once).
Me: No, I was just asking but it would really help me out because you could be making them whilst I make the curry. Dinner would be ready earlier.
9yo daughter. Oh, alright… (picture this sounding super enthusiastic – lol!)
Anyway, she ended up having lots of fun making these Gluten Free Wraps and took pride in presenting them the good side up (a technique I’ve taught her in the kitchen – lol) and letting her dad and brother know she made them.
Ingredients
- 1 cup Quinoa Flour
- 1/2 cup Brown Rice Flour
- 1/2 cup Tapioca Flour
- 1/2 teaspoon salt
- 1 cup boiling water
- Coconut oil (for lighting frying the wraps)
Method
- Add flours and salt to a bowl. Mix together well
- Add in the boiling water. Using a wooden spoon mix the flour and water until it comes together like a rough dough like mixture. There will still be some flour that you can’t seem to get to join the rest of the dough at this stage
- Use your hands to start to knead the dough, turning it over in the bowl and gathering all the loose bits of flour
- Keep kneading the dough for a few minutes. When it starts to feel a little tacky or sticky, leave it to rest in the bowl for 15 minutes
- Break the dough into 6 balls
- Take a square of baking paper, then place a ball of dough on it, then place another piece of baking paper on top. Flatten the dough ball with a dinner plate – this helps start it out as a round. Now use a rolling pin to roll the dough out to a larger thin circle
- Gently peel the top layer of baking paper off
- Heat a frying pan over medium heat, then melt a 1/4 teaspoon of coconut oil in the pan. Place the wrap face down in the pan and let it cook for about 30 seconds. Then peel pack the top layer of baking paper. You’ll see the wrap start to change colour on the top. At this stage, gently lift the wrap and if it’s lightly browned, flip it over.
- Cook this other side for 30 seconds to a minute, then take out and place on paper towel.
