This recipe is a beautiful mistake. I was making my simple flat breads, but with one of them, I didn’t roll the dough thinly enough and when I started to cook the bread, it puffed up a little. I thought “Hmmm, I wonder if I can cut that open and form a little pocket?” And… drum roll please… it worked! And so this Pita Pocket Bread Recipe was born.
Ingredients
- 1 1/2 cups wholemeal spelt flour (plus extra for kneading and rolling)
- 1/2 tspn of salt
- 1 tspn yeast
- 3/4 cup warm water
- 2 tspns olive oil
Method
- Mix flour, yeast and salt
- Make well in centre of the dry ingredients
- Mix in water and olive oil by stirring quickly with a fork
- Pour water into the well of the dry ingredients and stir through – this will form a sticky dough
- Sprinkle a small amount of flour over the top, then dust your hands with flour. Now knead this sticky dough for about 1 minute by just turning it around in the bowl – be prepared to get it all over your fingers
- Knead roughly for 1 min
- Cover the bowl with a clean tea towel and let sit for 10 mins
- Split into 3-4 balls
- Sprinkle more flour onto your bench and then take one ball, and roll it out into a flat circle about 1 cm thick. Do this for the other balls BUT do not stack the flat breads on top of each other or they will stick together
- Heat frying pan over high heat
- Dry cook 1 minute each side – if start to burn, turn down eat.
- Allow the bread to cool slightly, then whilst warm, take a sharp knife and gently cut into the side of the bread to create the pocket.

Storing / Freezing
At the time of writing this recipe, I have not tested freezing the pockets. I know the simple flat breads freeze and defrost well but without testing the pockets, I can not say if the pockets will open after freezing then defrosting. I’ll try this the next time I make them.
