This is a super simple way of making homemade granola. There’s no need to buy sugar and additive and preservative laden cereals when you can make this super simple granola at home. I just dry roast a whole heap of ingredients. You can add in more ingredients or take them out – whatever works for your family. It’s a good mix of what our kids think of as cereal (oats and puffed rice) and protein with nuts and seeds.
Ingredients
- 2 cups rolled oats
- 1 cup puffed rice
- 1 cup chopped mixed nuts (I used pecan, walnuts, brazil, almonds, cashews, macadamias)
- 1 -2 tspns ground cinnamon
- 1 tblspn flax seeds
- 1 tblspn sesame seeds
- 1 tblspn chia seeds
- 1/4 cup goji berries
- 1/4 cup organic raisins
- 1/4 cup coconut flakes
- 1/4 cup pepitas
If your family are used to a breakfast cereal with sugar, add in some rapadura or coconut sugar when you add the seeds. Adjust the amount of sweetness to where their tastes are now. But remember to try and reduce the amount of sugar over time. We personally prefer to add natural fruit toppings for additional sweetness.
Method
- Place a medium sized pan over medium to high heat
- Add rolled oats, puffed rice, nuts and cinnamon. Dry roast in the pan for approx 2-3 minutes. You will start to smell it as it cooks
- Add in the flax, sesame, and chia seeds and stir through. As soon as you hear the first seed pop, remove the pan from the heat, keep stirring to ensure the heat is evenly distributed
- Add in the remaining items and stir through
- Allow to cool in the pan, then store in an air-tight container.
Serving Suggestions
- Add almond milk (or milk of your choice) and add half a sliced banana
- Mix a good dollop of tahini with a splash of pure maple syrup in a little bowl, then spoon this on top of the granola, pour your milk over the top
- Add some freshly squeezed orange juice to the bowl and some grated apple, stir through. Add some greek natural yoghurt and stir until all of the mix is wet. This is a more elaborate but simple bircher – yum.
The Story Behind The Photo
We have started shooting and writing for our forthcoming recipe book “Recipes from the Bus”. All recipes will have been created in, and/or photographed from our bus, while we’re on the road travelling Australia. This photo shows our tiny gas cooktop, and it shows the reality of our kitchen. Notice the orange spot to the side, can you guess what I had also made that day? Pumpkin soup. There’s also splashed milk and oats here and there from where our daughter made porridge for her breakfast.
